Wijn goed bewaren: tips voor thuis How to Store Wine Properly: Tips for at Home

Storing wine sounds simple, but a handful of small choices decide whether a bottle still tastes as good a year from now as it does today. Temperature, light, and position all play a part.

Storing wine: what to watch for?

Good wine storage comes down to three things: a cool, dark, and stable spot. A temperature around 12 to 14°C is ideal, and keeping it steady matters more than hitting that exact number.

Light, especially direct sunlight, degrades wine over time. A cupboard, cellar, or dark corner works better than a bottle left on the counter in the sun. Too dry an environment isn’t ideal for a cork either: some humidity, somewhere between 50 and 70 percent, keeps a cork supple.

Vibration matters for a similar reason. A fridge that’s constantly cycling on and off is less suited to longer-term storage than a quiet spot with no movement. More on the science behind ageing and storing wine is available on Wikipedia.

Keep wine away from strongly scented products too, such as cleaning supplies, onion, or garlic. A cork is slightly porous and can pick up smells from its surroundings over time, which affects the wine itself. A separate cupboard or a quiet corner of the cellar works better than a spot next to the kitchen cabinets.

Cork or screw cap: storage isn’t the same

With a corked bottle, the position you store it in matters: ideally lying down, so the cork stays moist. Let the cork dry out, and air can reach the wine, degrading the flavour over time.

A screw cap doesn’t have this issue: it seals the bottle airtight regardless of position. A screw-capped bottle can simply be stored upright. Check the label or the bottle itself for which closure applies before you start storing it.

An opened bottle of wine: how long does it keep?

Once opened, wine gradually oxidises, even with the cap or cork back on. An opened bottle of red or white typically keeps for three to five days, provided it’s properly resealed and kept in the fridge.

Aromatic white wines tend to lose their freshness a little faster than fuller, more structured wines. A vacuum wine stopper that draws air out of the bottle slows that process somewhat, but it’s no substitute for proper sealing and cooling.

When in doubt, just take a small taste: if the wine smells or tastes flat or vinegary, it’s time to use the bottle for something other than drinking on its own, such as cooking.

Anyone who regularly opens a bottle is often fine with a small wine fridge or a quiet corner of the regular fridge. A freestanding wine rack in the living room works well for bottles you’ll open soon, but is less suited to storing wine over a longer stretch, precisely because room temperature tends to fluctuate.

So what about Pivotal Wines’ own collection?

Pesecká Leanka: wine storage advice for this wine

None of Pivotal Wines’ six wines are made for years of cellaring: these are styles that show best relatively soon after harvest, not bottles for a long-term wine cellar project.

Pesecká Leanka is the only wine in the collection with a specific storage recommendation on record: best enjoyed within two to three years of release. For the other five, the general rule of thumb above applies, without inventing a specific number of years for any of them.

Dunaj, the red wine in the collection, calls for a slightly different approach once the bottle is open: let it breathe before pouring, since the tannins soften noticeably the longer the bottle has been open.

Setting a bottle aside as a gift for a specific occasion, such as a birthday or a dinner a few weeks out? The same basic rules apply: store it cool, dark, and stable, so it looks and tastes just as good on the day as it did the moment you bought it.
