Bijzondere witte wijn

Voor bijzondere witte wijn begint u bij Pálava: een aromatische witte wijn met een intense geursensatie, gemaakt van een druif die vrijwel uitsluitend in Tsjechische en Slowaakse wijngaarden groeit. In het glas brengt Pálava tropisch fruit, rozenblaadjes, honing en warme kruiden naar voren, met een lange, geurige afdronk. Serveer Pálava gekoeld op 8 graden, bij kalfsvlees, geitenkaas of een aromatisch groentegerecht.

Pesecká Leanka is een andere zeldzame witte wijn in de collectie: op de eigen site van het landgoed omschreven als vrijwel onbekend in West-Europa. Deze wijn past verrassend goed bij de Nederlandse keuken van vandaag: een rijsttafel, curry of Surinaams-Indische afhaal is een van de betere combinaties, geserveerd gekoeld op 8 tot 10 graden.

Rizling Rýnsky is toegankelijker: de Slowaakse naam voor Rijnriesling, met dezelfde frisse zuurgraad die u al kent, alleen dan uit een streek die u nog niet kent. Deze wijn past goed bij vis, geroosterd gevogelte en oude kaas, licht gekoeld geserveerd. Chardonnay maakt de collectie compleet: een internationale druif, bewust ingetogen gemaakt, zonder opzichtige eik, en het lekkerst iets minder koud dan de rest, rond de 10 tot 12 graden, bij geroosterde kip of een romige pastaschotel.

Bijzondere rode wijn

Dunaj is de duidelijkste bijzondere rode wijn in de collectie: ontwikkeld door Slowaakse onderzoekers in 1958. Het duurde veertig jaar voordat de druif de markt bereikte, en vandaag groeit hij nog altijd op amper 68 hectare wereldwijd. Nergens anders ter wereld groeit deze druif.

In het glas brengt Dunaj donkere kers, pruim en donker fruit, met een vleugje kruidigheid en een lange afdronk vol fluweelzachte tannines en pure chocolade. Dat soort structuur maakt een druif bijzonder: niet omdat het etiket het zegt, maar omdat er nergens anders iets vergelijkbaars groeit.

Serveer Dunaj op 16 tot 18 graden en decanteer 30 minuten voor het serveren. De wijn past bij rood vlees, wild en oude, harde kaas: het soort gerecht waar een lichte rode wijn tekortschiet.

Cabernet Sauvignon zit ook in de collectie, met genoeg structuur om net zo goed te werken waar u een rode wijn zou verwachten. Toch is dit eigenlijk een rosé: meer daarover hieronder.

Bijzondere rosé wijn

Cabernet Sauvignon is de rosé in de collectie, gemaakt van een druif die normaal gesproken voor stevige rode wijn wordt gebruikt. Het resultaat heeft echte diepte: dichter bij een lichte rode wijn dan bij de gebruikelijke, lichte zomerse rosé.

De druiven komen uit de Južnoslovenská regio, een warmer deel van Slowakije dan de Kleine Karpaten waar de rest van de collectie vandaan komt. Die bewuste keuze geeft deze rosé zijn karakter.

Exceptional White Wine

Exceptional white wine in this collection starts with Pálava: an aromatic white wine with an intense bouquet, made from a grape that grows almost exclusively in Czech and Slovak vineyards.
