Wijn bij eten kiezen hoeft niet ingewikkeld te zijn, ook al lijkt de keuze soms overweldigend bij een volle kaart. Eén basisregel bepaalt het grootste deel van een goede combinatie: de rest is een kwestie van het juiste gerecht aan de juiste wijn koppelen.

Wijn bij eten: de basisregel

De kern van wijn bij eten komt neer op één ding: gewicht. Een licht gerecht vraagt om een lichte wijn, een stevig gerecht vraagt om een wijn met evenveel structuur. Draai die verhouding om en één van de twee verdwijnt van het bord.

Er zit een concreet mechanisme achter dat gewicht, niet alleen smaak. Een romig of vet gerecht heeft een wijn nodig die daar iets tegenover zet: bij een witte wijn is dat zuurgraad, die de rijkheid van het gerecht in balans houdt in plaats van erdoor overspoeld te worden.

Bij een stevig, eiwitrijk gerecht als rood vlees werkt het juist andersom. Een rode wijn met genoeg tannine geeft zichzelf genoeg tegenwicht om niet weg te vallen naast het gerecht.

Rizling Rýnsky: wijn bij eten met vis en schaaldieren

Mosselen, zalm, sushi, oesters: voor wijn bij eten uit zee is Rizling Rýnsky de logische keuze. Deze Slowaakse witte wijn, de lokale naam voor Rijnriesling, past van nature bij zeevruchten: perzikbloesem en lindebloesem op de neus, een fijne mineraliteit, en een heldere, droge afdronk die vis niet overstemt.

Dat maakt hem net zo geschikt bij een eenvoudige pan mosselen als bij gerookte zalm of een bord oesters. Serveer licht gekoeld op 8 tot 10°C, in een standaard witwijnglas.

Mosselen zijn nu, in september en oktober, op hun best: een goed moment om deze combinatie eens te proberen.

Welke wijn bij gevogelte

Bij kip is Chardonnay de wijn bij eten die het beste past. Deze witte wijn is bewust ingetogen gemaakt, zonder zware eiken: honing en citrus op de neus, een nootachtige ondertoon, en een lange, smaakvolle afdronk.

Die zachte, ronde stijl is precies waarom Chardonnay zo goed samengaat met geroosterde kip: de wijn concurreert niet met het vlees, maar vult het aan. Serveer iets minder koud dan een gemiddelde witte wijn, rond 10 tot 12°C.

Bij pittig Aziatisch eten, zoals een Indonesische rijsttafel of een Surinaamse curry, werkt Pesecká Leanka juist beter dan Chardonnay. Deze aromatische witte wijn, met zachte abrikoos, lavendel en honingbloesem, is een van de weinige wijnen uit de collectie die specifiek bij deze keuken past. Serveer gekoeld op 8 tot 10°C.

Welke wijn bij rood vlees en stevige gerechten

Voor rood vlees en wild is Dunaj het antwoord. Deze zeldzame Slowaakse rode wijn brengt donkere kers, pruim en donker fruit, met fluweelzachte tannines die precies opgewassen zijn tegen een stevig stuk vlees. Diezelfde structuur maakt Dunaj ook een goede match bij een rijk gerecht met donker vlees, zoals boeuf bourguignon of een langzaam gegaarde eendenbout.

Welke wijn bij asperges en kaasfondue

Asperges en kaasfondue staan niet met naam op een van de zes productpagina’s van Pivotal Wines. Toch geldt de basisregel voor wijn bij eten hier net zo goed: beide vragen om een frisse, stevig zure witte wijn.

Bij asperges neemt die zuurgraad de licht bittere ondertoon van de groente weg. Bij fondue snijdt diezelfde zuurgraad door de romige, vette kaas heen.

Which Wine with Fish and Shellfish

Rizling Rýnsky: wine with food from the sea

Mussels, salmon, sushi, oysters: for wine with food from the sea, Rizling Rýnsky is the obvious choice. This Slovak white, the local name for Rhine Riesling, suits seafood naturally: peach blossom and linden flower on the nose, a fine mineral edge, and a clean, dry finish that doesn’t drown out the fish.

That makes it just as suited to a simple pot of mussels as to smoked salmon or a plate of oysters. Serve lightly chilled at 8 to 10°C, in a standard white wine glass.

Which Wine with Poultry

With chicken, Chardonnay is the wine with food that suits best. This white is deliberately restrained, without heavy oak: honey and citrus on the nose, a nutty undertone, and a long, savoury finish.

That soft, rounded style is exactly why Chardonnay pairs so well with roast chicken: the wine doesn’t compete with the meat, it complements it. Serve it slightly less cold than an average white, around 10 to 12°C.

For spiced Asian-style food, such as an Indonesian rijsttafel or a Surinamese curry, Pesecká Leanka is actually the better fit over Chardonnay. This aromatic white, with soft apricot, lavender and honeysuckle, is one of the few wines in the collection built specifically for that cuisine. Serve chilled at 8 to 10°C.

Which Wine with Red Meat and Hearty Dishes

For red meat and game, Dunaj is the answer. This rare Slovak red brings dark cherry, plum and dark fruit, with velvety tannins built to match a hearty cut of meat. That same structure also makes Dunaj a good match for a rich, dark-meat dish such as beef bourguignon or a slow-braised duck leg.

Which Wine with Asparagus and Cheese Fondue

Asparagus and cheese fondue aren’t named on any of Pivotal Wines’ six product pages. Even so, the basic rule for wine with food applies here just as well: both call for a crisp, high-acid white.

With asparagus, that acidity lifts the vegetable’s slightly bitter edge. With fondue, the same acidity cuts through the rich, fatty cheese.
