Droog, halfzoet of zoet: wijnstijlen uitgelegd Dry, Off-Dry, or Sweet: Wine Styles Explained

Sweet wine, off-dry, or dry: the difference sounds simple, but the reality is often surprising. An aromatic, fruity nose doesn’t automatically mean a sweet taste, and that’s exactly where most of the confusion starts.

Dry, off-dry, or sweet: what does that actually mean?

The difference between dry, off-dry, and sweet comes down to how much residual sugar remains after fermentation. Yeast converts grape sugar into alcohol. If that process stops before all the sugar is converted, residual sugar is left behind.

A dry wine has barely any residual sugar and tastes crisp and clean. An off-dry wine has a small amount of residual sugar left, just enough to notice, without the wine becoming syrupy. In a sweet wine, that residual sugar level is clearly higher. More on how residual sugar makes a wine dry, off-dry, or sweet is explained on Wikipedia.

Aroma and taste aren’t the same thing. A wine can smell intensely fruity or floral without actually tasting sweet, and that’s exactly where the six wines from Pivotal Wines can be a surprise.

Dry wines in the collection

Pálava: aromatic but not a sweet wine

Chardonnay is the clearest dry wine in the collection. The style stays deliberately understated, without heavy oak, which carries straight through into a crisp, dry finish with no noticeable residual sugar.

Pálava is the bigger surprise. This aromatic white wine smells of tropical fruit, rose petals, and honey, a profile that quickly reads as sweet. Yet Pálava is a dry wine. An official lab certificate confirms a residual sugar level of 3.4 grams per litre, comfortably within the range for a dry classification.

That makes Pálava the clearest proof that an intense nose says nothing about actual sweetness. Browse Pálava to taste that for yourself.

Late harvest, but not sweet: Rizling Rýnsky

Rizling Rýnsky carries the classification Akostné s prívlastkom, Neskorý zber: a quality wine with the designation late harvest. That designation quickly suggests a sweeter wine, but on its own it says nothing about the final residual sugar level.

On the nose, Rizling Rýnsky brings peach blossom and linden flower, with a fine mineral acidity. On the palate, it’s precise rather than sweet, with bright fruit and acidity that keep everything in balance.

Serve lightly chilled at 8 to 10°C. Browse Rizling Rýnsky in the shop.

Is Chardonnay, Moscato, or Riesling a sweet wine?

Chardonnay as a grape can be either dry or full and creamy, but it’s rarely known as a sweet wine: Pivotal Wines’ own Chardonnay is dry too, as already shown above.

Moscato is a different story. This grape is known worldwide for aromatic, often lightly sparkling wines with noticeable residual sugar. Riesling can range from bone dry to distinctly sweet, depending on where and how the grape is harvested.

That’s exactly why Rizling Rýnsky carries the late-harvest designation, though the wine itself, as shown above, reads as precise rather than sweet.

Pivotal Wines doesn’t carry Moscato, but Pálava shows that an aromatic profile can stay perfectly dry.

Semi-sweet: Pesecká Leanka

None of the wines in the collection are unambiguously sweet, but one is semi-sweet: Pesecká Leanka. The producer classifies it as polosladké, Slovak for semi-sweet. Its aroma, with apricot, lavender and a hint of honeysuckle, fits that too.

Yet the wine stays fresh. Clean acidity keeps the sweetness in balance, so it never turns syrupy. That makes it a good choice with spicy Thai, Indonesian and Surinamese dishes, where a touch of sweetness tempers the heat.

Browse Pesecká Leanka and taste for yourself how sweet and fresh come together.
